Emmanuel Waltisperger
A passionate chef in the heart of Hirtzfelden

Born in Hirtzfelden, Emmanuel Waltisperger has always been passionate about cooking. After training at the Guebwiller hotel school, he perfected his know-how by working for twelve years in Michelin-starred restaurants in France and abroad. He worked in prestigious establishments such as the George V in Paris or, The Brent Bridge in Switzerland, before representing French gastronomy at the French embassies in Afghanistan and Austria.

A dream come true

In 2015, Emmanuel decided to return to his roots and opened Côté Cuisine in an old renovated barn in Hirtzfelden. His restaurant is a true blend of tradition and modernity, where the authenticity of local products meets inventive and bistronomic cuisine. With an open kitchen to the dining space, guests can observe the chef and his team at work, making the experience even more immersive.

A seasonal, local,
and sustainable cuisine

The chef's philosophy is simple: highlight fresh and local products while prioritizing short supply chains.. 80% of the ingredients used in the kitchen come from the surrounding area, and Emmanuel cultivates around sixty aromatic herbs and edible flowers himself in the restaurant garden.

“We offer cuisine made with fresh market produce and we work a lot with local market gardeners.”

The menu changes every 4 to 6 weeks, guaranteeing refined and accessible dishes, in accordance with the seasons. A small menu that adapts to everyone's diet by offering, in addition to a meat and a fish, a vegetarian dish on its menu.
